
What you'll need...
- Chicken drumsticks and wings (smallish pieces for easy cooking)
- Cajun spice mix (or make your own with cayenne pepper, papikra, dried oregano, chilli flakes, dried thyme and any others to your own liking)
- Crushed dried chilli flakes
- S&P
- Beaten eggs
- Flour
- Panko breadcrumbs
Pulling it together...
- Mix flour with some of the cajun spice mix, dried chilli flakes and S&P (for ease - do it in a bag). Place remaining cajun mixture, chilli flakes & S&P in a bowl with Panko breadcumbs - make sure this is mixed through
- Coat chicken in the flourly-spice mix, shaking off excess flour
- Toss chicken into beaten egg mixture to coat
- Transfer chicken to bowl with Panko breadcrumbs and make sure surface of chicken is well coated
- Place chicken mixture into the fridge for 1hr
- Fry/bake chicken till golden brown
