Southern-styled fried chicken


What you'll need...
  • Chicken drumsticks and wings (smallish pieces for easy cooking)
  • Cajun spice mix (or make your own with cayenne pepper, papikra, dried oregano, chilli flakes, dried thyme and any others to your own liking)
  • Crushed dried chilli flakes
  • S&P
  • Beaten eggs
  • Flour
  • Panko breadcrumbs
Pulling it together...
  1. Mix flour with some of the cajun spice mix, dried chilli flakes and S&P (for ease - do it in a bag). Place remaining cajun mixture, chilli flakes & S&P in a bowl with Panko breadcumbs - make sure this is mixed through
  2. Coat chicken in the flourly-spice mix, shaking off excess flour
  3. Toss chicken into beaten egg mixture to coat
  4. Transfer chicken to bowl with Panko breadcrumbs and make sure surface of chicken is well coated
  5. Place chicken mixture into the fridge for 1hr
  6. Fry/bake chicken till golden brown

  • Coleslaw (see below)

Coleslaw


What you'll need...
  • Shredded cabbage
  • Red onion
  • Shredded carrot
  • Sugar
  • Vingear
  • Kernels of corn
  • Egg mayo
Pulling it togther...
  1. Toss veges together in a bowl
  2. Add vingear, mayo and sugar to taste (your after a crunchy, tangy & slightly sweet coating)

  • Fried chicken

Hashbrowns



These delicious hashbrowns can be easily pulled together and stuck in fridge/freezer for cooking down the track.

What you'll need...
  • A couple of potatos
  • Panko breadcrumbs
  • Egg
  • Flour
  • S & P
Pulling it together...
  1. Boil peeled potatos till cooked through
  2. Grate potatos and add S&P to taste
  3. Grab a handful of potato shavings and roll into mini balls (size of a golf ball) then flatten with palm into 1cm pieces
  4. Bake/fry till golden brown
